One batch fills 4 pint sized mason jars. I make a bunch of this to give away as extended family, co-worker, or hostess gifts, and you can decorate the jars in a festive manner.
MEXICAN HOT CHOCOLATE MIX:
3 cups nonfat dry milk powder 2 cups powdered sugar 1/3 cup brown sugar
1 – 8 oz. container of cocoa powder. (I do a couple in dark cocoa, and a couple batches of regular cocoa)
3/4 cup white chocolate chips 3/4 cup semi-sweet chocolate chips
1/4 tsp. salt 2 – tsps. corn starch 1 tsp cinnamon 1/2 tsp cayenne red pepper
In a large bowl, whisk all the ingredients together until well mixed. In 2 cup batches, pulse in food processor until smooth.
To make hot chocolate, place 1/3 cup mixture in a mug, and add very hot milk. Top with marshmallows or whipped cream and sprinkle with cinnamon. YUM!
